    Heat the oven to 450°F. Season the beef and place it in a roasting pan. Toss potatoes with oil and salt around it. Roast for 15 minutes, then reduce the oven to 375°F.

    Whisk flour, milk, eggs, and 1/2 teaspoon salt. Pour into 12 well-greased muffin cups and bake beside the roast until puffed and browned, 20 to 24 minutes.

    Continue roasting the beef until it reaches 130°F for medium-rare, about 35 to 45 minutes total. Rest for 10 minutes before slicing.

    Heat the peas, carrots, and gravy. Serve the sliced beef with roast potatoes, Yorkshire puddings, vegetables, and gravy.
