Vegetarian Sausage and Potato Breakfast Skillet

Cook

Make dinner

    Microwave the potatoes with 2 tablespoons water in a covered bowl until barely tender, about 6 minutes. Drain well.

    Heat olive oil in a large skillet over medium-high. Add the potatoes and cook without stirring for 4 minutes.

    Add the sausages and mushrooms with 1/2 teaspoon salt and cook until browned and the potatoes are crisp, 8 to 10 minutes.

    Nestle the tomato halves cut-side down in the skillet and cook for 3 minutes. Add the spinach and turn until just wilted.

    Fry the eggs to your liking, add them to the skillet, and serve with toast and black pepper.
