    Cook tortellini according to package directions. Reserve 1 cup cooking water and drain.

    Meanwhile cook zucchini in olive oil in a wide skillet for 4 minutes. Add garlic for 30 seconds.

    Add pot roast and beef broth and simmer for 4 minutes, until the beef is hot and the broth reduces slightly.

    Fold in tortellini and Parmesan, divide among plates, finish with microgreens, and serve with toasted bread.
