Lentil Loaf with Mashed Potatoes and Broccoli

Make dinner

    Heat the oven to 375°F and line a loaf pan with parchment. Cook the onion and carrot in olive oil until soft, 6 to 8 minutes.

    Mash the lentils until roughly half are broken down. Mix with the vegetables, oats, flax mixture, tomato paste, soy sauce, 1/2 teaspoon salt, and black pepper.

    Press the mixture firmly into the loaf pan and bake until set and browned at the edges, 35 to 40 minutes. Rest for 10 minutes before slicing.

    Warm the mashed potatoes and steam the broccoli until bright green and tender. Serve each lentil loaf slice with both sides.
