    Return all pork to the pot. Add soy sauce, vinegar, garlic, bay leaves, peppercorns, sugar, and 3/4 cup water.

    Bring to a simmer, cover, and cook over medium-low until the pork is tender, 35 to 40 minutes.

    Uncover and simmer until the sauce is glossy and clings to the pork, 8 to 10 minutes. Serve with rice.
