Make dinner

    Mix pork with 1 tablespoon soy sauce and shape into four thin patties. Cook in 1 tablespoon neutral oil until browned and 160°F; transfer.

    Add the remaining oil and scramble the eggs until just set. Add the frozen vegetables and cook for 3 minutes.

    Add the rice and press out any clumps. Cook, stirring occasionally, until the rice is hot and lightly crisp.

    Stir in the remaining soy sauce, sesame oil, and scallions and serve with the pork patties.
