Make dinner

    Whisk the eggs with salt. Melt 1 teaspoon butter in a nonstick skillet and wilt the spinach and scallions; transfer.

    Melt a little more butter and pour in one-quarter of the eggs, tilting the pan into an even layer.

    When nearly set, add one-quarter of the spinach and cheese to one side and fold the omelet over the filling.

    Slide onto a plate and repeat to make four omelets.
