Make dinner

    Cook penne until al dente. Reserve 1 cup pasta water and drain.

    Cook mushrooms and pepper in 1 tablespoon olive oil until browned and tender. Add garlic for 30 seconds.

    Toss vegetables with penne, lemon juice, and enough pasta water to coat.

    Season tilapia and sear in remaining oil until opaque and 145°F, 3 to 4 minutes per side. Serve with pasta.
