20-Minute Shrimp Fried Rice
Shrimp, cold rice, egg, peas, and carrots cook quickly in one hot skillet for a takeout-style dinner.

Heat 1 tablespoon oil in a large skillet or wok. Cook shrimp until pink and opaque, 2 minutes per side; transfer to a plate.

Add remaining oil and scramble the eggs until just set. Add rice and cook, pressing out clumps, for 4 minutes.

Add peas, carrots, soy sauce, and sesame oil. Stir-fry for 3 minutes.
