Chicken, smoky andouille, peppers, tomatoes, and rice simmer together into a hearty one-pot dinner.

Cook
Make dinner
- 01
Brown the sausage in a Dutch oven over medium-high heat for 4 minutes. Transfer it to a plate, leaving the drippings behind.
- 02
Season the chicken with 1/2 teaspoon salt and cook until lightly browned. Add onion, bell pepper, and celery; cook for 5 minutes. Stir in garlic and Cajun seasoning.
- 03
Add rice, tomatoes, broth, and sausage. Bring to a boil, cover, reduce the heat to low, and simmer for 20 minutes.
- 04
Remove from the heat and rest covered for 5 minutes. Fluff the rice and check that the chicken has reached 165°F.

Useful swaps
- Use a mild smoked pork sausage for less heat.
- Check sausage, broth, and seasoning labels for gluten-free certification when needed.
Why this is a good weeknight call
It keeps the cleanup to one main pan. The ingredient list stays focused, and the recipe has a clear stopping point instead of extra optional projects.
