Make dinner

    Brown the sausage in a Dutch oven over medium-high heat for 4 minutes. Transfer it to a plate, leaving the drippings behind.

    Season the chicken with 1/2 teaspoon salt and cook until lightly browned. Add onion, bell pepper, and celery; cook for 5 minutes. Stir in garlic and Cajun seasoning.

    Add rice, tomatoes, broth, and sausage. Bring to a boil, cover, reduce the heat to low, and simmer for 20 minutes.

    Remove from the heat and rest covered for 5 minutes. Fluff the rice and check that the chicken has reached 165°F.
