Make dinner

    Heat oil in a skillet. Cook onion with 1/2 teaspoon salt for 6 minutes. Add curry powder for 30 seconds.

    Add tomatoes and broth and simmer until thickened, 10 minutes.

    Halve the eggs and nestle them cut-side up in the curry. Cover and warm gently for 5 minutes.

    Finish with cilantro and serve over rice.
