    Heat the oven to 375°F. Fit the crust into a 9-inch tart or pie pan, prick the bottom, line with parchment and weights, and bake for 12 minutes.

    Meanwhile, cook the bacon in a skillet until crisp. Transfer to paper towels and cook the shallot in the drippings for 2 minutes.

    Scatter bacon, shallot, and Gruyere over the warm crust. Whisk eggs, half-and-half, nutmeg, and pepper, then pour over the filling.
